White Bean Chicken Salsa Verde

I’ve got a really good and simple crockpot recipe for you! It was inspired by this Healthified 5-Ingredient White Chicken Chili recipe from http://theskinnyfork.com/blog/white-chicken-chili.

It’s a great meal prep recipe, using just a few ingredients, and minimal work required. The best part is that you can use it to create various dishes for the week.

Here is my version.

Chop 1 small red onion and 2 red bell peppers and place on bottom of crockpot. Add 2 cans cannelini beans, rinsed and drained. Place 1.5-2lbs. Chicken breasts, cut in half on top. Pour 1 jar salsa verde over chicken. Sprinkle 2tsp. Cumin over top. (I didn’t add any additional fluid).Stir lightly and cook on high 3.5 hours. Lightly shred chicken in crockpot and give it all a good stir!

Ideas for how to serve it:

Over brown rice or quinoa with fresh cilantro on top and a veggie side.

Wrapped in corn tortillas with avocado and fresh tomato chunks.

Served with homemade corn bread and a side salad.

Nachos: served over tortilla chips and topped with tomatoes, lettuce, cheese, etc.
