Hello! I wanted to share with you a really good recipe that I came across a while ago and have made a couple of times but should make more often. It’s really easy to prepare, only a few ingredients, and all in one dish. It’s a Greek chicken bake that incorporates artichokes which I don’t use in many other dishes, so it makes for a unique delicious meal!

My tips and tweaks:
I used 2 cans diced tomatoes instead of 2 fresh tomatoes. If you have the fresh, I would recommend using them! I always have canned on hand, and I get the brands without BPA in the lining.
I cut the chicken breasts in half for smaller pieces and shorter cooking time.
I used Mrs. Dash garlic and herb seasoning blend and a little salt and pepper instead of the Greek seasoning that I couldn’t find.
I used 3 Tbsp. olive oil instead of 1/4 cup.
I baked mine at 425 degrees for 23 minutes.
We enjoyed our Greek chicken bake with roasted zucchini and naan bread with olive oil. I hope you can add this dish to your list of favorite go-to recipes!
