Here are some easy weekend meal prep recipes and ideas! Todd and I enjoyed the turkey burgers with sautéed bell peppers and onions and Italian chicken breasts with risotto and veggies for several lunches and dinners throughout the week. At the end of the week we used Jenna’s breakfast nachos idea for a go-to dinner.

While I do like making risotto on the stovetop, this crockpot recipe is a big time saver and it turns out delicious too! I added spinach instead of the peas.
Pumpkin dark chocolate energy bites:
We topped our tortilla chips with scrambled eggs, black beans, sautéed bell peppers and onions, cheese and salsa!
